Tamale Pie

Here is an easy, throw together, and bake kind of recipe. Cook the grits, brown the meat, open the cans and dump it all in a 9 x 13 pan.

I found a Tamale Pie recipe in a Southern Living Magazine but it wasn’t quite right, so I tweaked it a bit and custom designed this dish for our family. Less cheese and no cream but a lot more substance in one pan. This dish is excellent with sour cream and a bag of corn chips. It is also perfect as a tortilla filling on Taco Tuesday! If you really want to make it fancy or spicy add some chopped cilantro or maybe some Jalapeño peppers. This recipe is “Kid Friendly” but I hope in years to come it will need an adjustment, to the spicy side.
